How do I connect with a client who does not want to join by video call?

If your client is not familiar with video calls or would rather talk over the phone, you can dial out to their phone from the video call

Start your video call by pressing the JOIN CALL button:

When you are connected to the video call, if the client does not join, or you already know that they want you to dial out to them, make a call by entering their telephone number and then press CALL
